Game Weeks: Delicious game dishes such as venison fillet tartare with rocket, chestnut foam soup, mushroom ragout with bread dumplings, venison ragout, venison roulade, roast saddle of venison or pheasant breast wrapped in bacon – rounded off with caramelised blueberry pancakes and apple fritters.
Slaughter Feast: Hearty classics – lamb’s lettuce salad with walnut dressing, tripe soup, fried black pudding, pickled pork belly, black pudding and liver sausage, veal shank, sauerkraut, bread dumplings, gravy and sweet grape tart.

Pumpkin: Vegetarian and hearty – pumpkin and porcini carpaccio, pumpkin foam soup with wild boar strudel, pumpkin risotto with goat’s cheese, pumpkin lasagne, pumpkin crème brûlée with vanilla ice cream – many more dishes accompany this culinary autumn week.
Goose: From a delicate ragout to the classic half or whole goose for 2 or 4 people: served with bread dumplings, red cabbage, chestnuts, creamed savoy cabbage and a trio of apples – a feast for all lovers of autumnal goose dishes.
Pepper, salt and smoke: smoked specialities such as smoked duck breast, fish and terrines meet the robust flavours of Assam long pepper, red cabbage, whisky cream, Szechuan cherry sauce and pepper polenta – perfect for gourmets enjoying the culinary delights of autumn.
